Talking about Janis the other day started me thinking also about Jimi Hendrix.
You know, actually my favorite Jimi Hendrix song is one of the first ones people reference, but IMO, it's his best - the blues infusion of it ...

I also dig the Sting's jazz version, jazz guitar (bow chicka bow wowww?) alto sax, and lots of high hat (but of course still includes the obligatory 80s solo guitar moment) ...
